Bring it to your table

A homemade almond drink has a clean, nutty flavour and a short ingredient list. It is best treated as a fresh kitchen preparation made in modest batches.

Soak and blend

Soak almonds until softened, rinse them well and blend with fresh water until milky. A fine cloth or nut-milk bag gives a smoother drink if you prefer it strained.

Use clean equipment.
Blend thoroughly.
Start unflavoured before adding cardamom or dates.

Use the remaining pulp

The strained almond pulp can be dried gently and used in porridge, granola or dough where its texture suits the recipe. This makes the preparation more economical.

Refrigerate pulp promptly.
Use it soon.
Toast lightly before storing longer.

Store safely

Fresh homemade drinks do not have the stabilisers of packaged products. Refrigerate immediately in a clean bottle, shake before serving and make only a small quantity.

Label the preparation date.
Discard if smell or texture changes.
Keep chilled until serving.
